Shrimp and Grits Recipe

1 lb. clean shrimp (I would pull all the shell off, even the tail)
2 Tablespoon oil
1/8 cup creole seasoning
4 cups of chicken broth
1 cup grits
1 cup corn (I used my frozen corn that I put up this year)
4 Tablespoon butter
1/4 cup shredded cheddar cheese
salt and pepper to taste

Put shrimp into large baggy with seasoning, seal and toss around to coat.
Put broth into a large sauce pan, bring to boil, add salt, add corn, then slowly add grits. Bring to boil, then turn down to simmer, with lid. Stir often to keep from sticking. Cook for 45 minutes, add butter, stir. You can add cheese at this point, however, I ended up just putting it on top after I served it. Put oil in skillet, heat up, add shrimp, cook until done, mine took about 5 minutes. Put grits into bowl, add cheese at this point, if you didn't add into grits. Place shrimp on top. Serve
