4 TB. butter, divided
1/4 C. chopped onion
1/4 C. chopped green pepper
2 TB. flour
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. dry mustard
Pinch of cayenne (ground red pepper)
1/2 C. milk
1+ C. corn
1 egg, slightly beaten.
1/2 C. dried small bread chunks
1/3 cup fine bread crumbs

In skillet or sauté pan, melt 2 TB. butter. Add chopped onion and chopped green pepper and sauté until vegetables are soft.

In small bowl mix together flour, salt, paprika, dry mustard, pinch of cayenne (ground red pepper). Add mixture to butter and vegetables and sauté on low heat for a few minutes. Add milk to the pan and stir until thickened.

In mixing bowl, combine corn and egg, slightly beaten. Stir contents of skillet into corn mixture and set aside.

In same skillet (might want to wipe it out a bit), melt 1 TB. butter, add ½ C. dried small bread chunks, and stir until the chunks are coated with the butter. Add buttered chunks to corn mixture. Pour corn mixture into buttered shallow baking dish.

In same skillet, again melt 1 TB butter and add 1/3 cup fine bread crumbs. Stir until slightly browned (Don’t let burn!) Cover contents of baking dish with buttered crumbs. Bake at 400º for about 20 – 30 minutes or until mixture is set and top is browned.
