3-4 loaves of sliced white bread
1 lb. butter
4 onions, chopped
6-8 ribs of celery, chopped
2 eggs, beaten
Chicken broth or milk to moisten
(Optional: 1 lb. fresh or 4 sm. cans mushrooms)

Directions:
Directions:
In large roasting pan, cut up sliced white bread into cubes. Let sit overnight to dry.

Melt butter. onions and celery until tender and browned. (Optional: 1 lb. fresh mushrooms.)

Add vegetables to bread crumbs and toss to coat. Mix in parsley, poultry seasoning, and pepper to taste (a good bit of each). (Optional: 4 small cans mushrooms)

If too dry, add some chicken broth, milk, or bit of water from mushroom can.

Add 2 beaten eggs and mix. Stuff bird with stuffing and cook as instructed. Or, divide into pans and bake at 350º for about 1 hour.
