2 med. cooking apples
1 cup sugar
1/2 cup shortening
1 tsp. vanilla
2 large eggs
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 cups chopped apples
1/2 cup walnuts
1/2 cup raisins
1 Tbsp. sugar
1/4 tsp. cinnamon

Directions:

Heat oven to 350º. Grease loaf pan. Cut apples and chop, set aside. With a wooden spoon, mix in sugar, shortening, vanilla and eggs. Stir in flour, baking powder, soda, cinnamon and salt until smooth (batter will be thick). Stir in apples, walnuts and raisins. Spread batter into pan. In a small bowl, mix together the tablespoon of sugar and 1/4 tsp of cinnamon. Sprinkle over batter. Bake 50-55 minutes. Cool on wire rack.
