Ingredients:  
1 head garlic, cracked and peeled
1 cup white sugar
1 cup salt
2 onions, chopped
3 stalks celery, chopped
1 carrot, chopped
1 small bunch of parsley, chopped, stocks included
1 large sprig of rosemary, chopped
3 sprigs thyme, roughly chopped, stocks included
2 bay leafs, ripped
1/2 tbsp. cracked pepper
1 cup white wine
Enough water to cover turkey

Mix all ingredients together. Pour over partially frozen or fully frozen turkey and let sit for up to 12 hours. If using fresh meat then add ice to the water. Remove bird from brine and pat dry with paper towels. Discard brine with vegetables. Stuff and cook turkey according to weight.

This brine can be cut in half and used for a chicken. You will be amazed how juicy the meat will be!
