5 strips of bacon, diced
1 small onion, chopped
2 cups water
4-5 medium potatoes, peeled and cubed
1 1/2 tsp salt
1/8 tsp pepper
1/3 cup flour
2 cups milk
1 1/2 cups shredded Swiss cheese (slices will work)

Directions:
Directions:
In stock pot, cook bacon until crisp. Remove bacon to paper towel and set aside.
Saute onion in bacon drippings until tender.
Add water, potatoes, salt, and pepper. Bring to boil. Reduce heat and simmer for 12 minutes or until potatoes are tender.
Combine flour and milk until smooth. Gradually stir into potato mixture. Return to boil. Cook for 2 minutes, stirring constantly. Remove from heat. Stir in cheese; stir until cheese melts. Stir in bacon.
