2 lb. bag of cubed hash brown potatoes
1 medium chopped onion
1 can cream of chicken soup
8 oz. sour cream
1 1/2 cup milk
2 T. butter
1 small Velveeta Cheese, cube

1 sleeve Ritz crackers, crushed
1/4 cup melted butter

Directions:
Directions:
Mix all together except the crackers and 1/4 cup butter.
Put into large oblong baking dish, oblong cake pan works good for this.
Cook at 350º for 45 minutes. Covered
Mix the crackers and butter together and put on top of cooked potatoes.
Put back into oven, uncovered for another 15 minutes.

This is kind of like Cracker Barrel potatoes. Family favorite. I put 6 to 12 servings because it depends on what else you are fixing with it or if you have family members that like this so much, like mine do, it will just serve 6 people. LOL, just ask my daughter, she always wants the leftovers.
