3 lbs Yukon gold potatoes, scrubbed and cut into chunks
4 cloves garlic, halved
3 Tbsp olive oil
2 Tbsp butter
1/4 tsp salt
1/4 tsp freshly ground black pepper
2 Tbsp capers, drained and chopped
1/3 cup fresh Italian flat-leaf parsley
2 tsp finely shredded lemon peel
1 lemon half

Directions:
Directions:
In a large saucepan cook potatoes and garlic in lightly salted boiling water, covered, 20 to 25 minutes or until tender.

Drain potatoes, reserving 1 cup water. Mash potatoes with a potato masher until smooth. Add 2 Tbsp of the olive oil, butter, salt, pepper, and enough of the reserved liquid to reach desired consistency. Stir to combine.

Transfer potatoes to serving dish. Top with capers, parsley, and lemon peel. Drizzle with remaining olive oil. Squeeze lemon juice over before serving.
