2 pounds bulk sausage
1 cup finely chopped green pepper
3/4 cup chopped onion
2 1/2 cups coarsely chopped celery
2 (2 1/8-ounce) packages chicken noodle soup mix
4 1/2 cups boiling water
1 cup uncooked rice
1/2 teaspoon salt
1/4 cup melted butter or margarine
1 cup blanched almonds, slivered (optional)

Directions:
Directions:
Combine soup mix and boiling water in large saucepan; stir in rice. Cover and simmer 20 minutes or until tender. Add sausage mixture and salt; stir well.
Pour into greased baking dish. Sprinkle remaining celery over top; drizzle with melted butter. Bake at 375 degrees 20 minutes. Makes 10 servings.
If almonds are used, saute with celery, green pepper and onion. Mix most of almonds with other ingredients; save a few to sprinkle on top. Omit melted butter.

Note from Dorothy: (Phyllis, this is as the book has it. I don’t think they even package the soup mix in 2 1/2
oz. any more. I use both envelopes of a 3/5 or 4.1 package for mine, but add extra water
(whatever consistency you want) during the baking period which is about half an hour. I
do not use any melted butter, and have never done it with the almonds. Good luck.)
