9" pie crust
1 1/2 C. grated Swiss Cheese
1 T. Flour
1/2 lb. bacon
1 large Onion chopped
2 T. butter
3 Eggs
1 C. Milk
1/2 C. Light Cream
1/2 tsp. Salt
Nutmeg

Directions:
Directions:
Bake pie crust for 5 minutes at 450º.
Mix cheese and flour together.
Fry bacon until crisp, drain off the grease.
Saute the onion in the butter in the same pan.
Spread the cheese in the bottom of the partially baked pie crust.
Sprinkle with bacon and onion.
Beat eggs lightly, add cream, milk, and seasoning.
Pour into the pie crust. Jiggle the pan to settle the mixture.
Bake at 400º for 15 minutes. Reduce heat to 350º and bake 10-15 min. longer or until custard sets.
Cool 10 minutes.
