1 1/2 C. White Corn Meal
1 C. Flour
3 Heaping tsp. Baking Powder
1 tsp. Salt
1 T. sugar
2 eggs
2 C. Milk - more if necessary

Directions:
Directions:
Sift dry ingredients and add eggs and stir to blend. Begin adding milk, beating together by hand until a thin batter is formed.
Heat 2-3 T. oil in a cast iron skillet.
Put the heated oil into the mixture and beat slightly to blend (may be a little lumpy).
Bake at 400º for about 30 minutes.
