Put about a qt. of milk in top of double boiler. Rinse (or not) 1 cup rice and put in milk. Cook about an hour, stir often. Just a little salt at beginning, not even a tsp. When grains start to puff, cover and cook.
Later, add 1/2 to 1 cup of sugar, some cream about 1/4 cup, add a little vanilla and little chunk of butter. When cold, decorate with cinnamon.
