2 Tbsp butter
2 1/2 Tbsp flour
2 cup milk
1/2 tsp salt
1/8 tsp pepper
1 cup shredded cheese
3 Tbsp butter
1/4 cup chopped onion
1/4 cup ham (shrimp/crab)
12 eggs
2 1/2 cups bread cubes
1/4 cup melted butter

Directions:
Directions:
Melt 2 Tbsp butter in a sauce pan over medium heat. Add flour, stir to make a paste. Add milk, salt, pepper and shredded cheese. Set aside. Saute onion in 3 Tbsp butter. Add meat. Set aside. Scramble eggs. Stir all of the above together. Pour into 9x13 pan. Top with bread cubes. Drizzle melted butter over bread. Bake uncovered at 350º for 30 minutes.
**Can be made the night before and refrigerated
**A variety of veggies can be substituted for meat, like mushrooms, peppers and broccoli.
