2 cups pre-cooked white corn meal (brand:P.A.N.
3/4 c finely crumbled queso fresco
1 1/2 c warm water (more if necessary)
3 Tbs milk
1 Tbs sugar
4 Tbs butter
pinch of salt

Directions:
Directions:
combine corn meal, cheese, milk, sugar, butter and salt in medium bowl.
pour in water gradually and knead with hands until a dough is formed
take a small amount and flatten it between your palms.
If the edges crack, knead in more water a Tbs at a time until dough is supple and smooth but not sticky.
cover and set aside for 5 min
Divide dough into four even pieces and roll into balls on wooden cutting board
flatten each ball down to a disk about 5 inches in diameter and 1/4 " thick
In cast iron skillet over med-low heat melt butter. Add arepas and cook moving around pan and rotating them until first side is charred in spots and a dry crust has formed about 5 min
flip arepas and cook on second side, 5 min longer
serve with additional cheese, melted butter or toppings of your choice
