1 1/2 lbs. set meat cut into 1 1/2" cubes
2 T salad oil
1 lg. onion, sliced and separated into rings
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
5 c. sliced potatoes
1/2 tsp. salt
dash of pepper
1/8 tsp. dried thyme leaves
1 3/4 c. water

Directions:
Directions:
Brown beef in oil. Combine with onions. Put in 2 1/2 quart casserole and sprinkle with flour, salt, pepper, and thyme. Pour water over mixture in casserole. Cover and bake 1 1/2 hours at 350º. Top meat with potatoes. Sprinkle with salt and dash of pepper. Cover and bake about 45 minutes until potatoes are tender. Remove cover and place under broiler about 3 minutes until potatoes are lightly browned.
Meat makes gravy as it bakes under layer of sliced potatoes.
