4 c. very thick farm cream
1/2 c. water
1c. flour
1 tsp. salt
4 c. hot milk
White and brown sugar mixed

Pour cream into kettle. Rinse the cream jar with water and add that to kettle. Cook cream very gently for 20 minutes. Put flour into sifter and sprinkle onto cream, stirring briskly with a wire beater. Boil until fat comes to the top. Skim off the fat and save. When fat is m
Nearly removed completely, begin to stir in the hot milk. Add this gradually, stirring briskly. The mush should be smooth and creamy. Serve this with hot melted butter and sprinkle with sugar mixture.
(You may use some of the fat from the cream to serve on the mush, but some people find this to be too rich.)
