CAKE:
1/2 c. shortening
2 eggs
1 c. sugar
1/2 c. water
2 tsp. grated orange rind
3 T. orange juice
1 1/2 c. flour
1/4 tsp. salt
2 1/2 tsp. baking powder

FILLING:
2 T. butter
4 T. cornstarch
1 c. sugar
1 c. orange juice
1/2 tsp. salt
1 tsp. lemon juice

CAKE:
Mix shortening and sugar. Separate eggs. Add yolks to shortening/sugar mix and beat until blended. Add water, orange rind, and orange juice. Mix in. Add flour, baking powder, and salt. Fold in beaten egg whites. Bake in 2 round cake pans that have been greased and floured. Bake at 350º for about 30 minutes. Cool in pans. Remove from pans and put on plate speeding orange filling between layers, on sides and top of cake.

FILLING:
Melt butter in top of double boiler. Blend in cornstarch, add orange rind, orange juice, sugar, salt, and lemon juice. Mix well. Cool.
