1 1/2 Tablespoons extra-virgin olive oil
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 28-oz. can crushed tomatoes (or whole tomatoes blended)
1/2 teaspoon salt
1 sprig fresh basil (optional)
1 Tablespoon butter (optional)

Heat a medium saucepan over medium heat. Swirl around the olive oil to coat the pan and add garlic and red pepper flakes. Stir constantly for 30 seconds. Don't cook it to golden.

Raise the heat to high and stir in the tomatoes and salt. Bring to a boil, reduce the heat, and simmer, uncovered, for 25-30 minutes. In the last 15 minutes of cooking, add the basil sprig, if using. Remove the basil before serving and swirl in the butter, if using.

Melissa loves this sauce so much she can eat it plain, straight from the pot! For a heartier variation, use a skillet and cook some Italian sausage first. Then add the garlic and crushed red pepper flakes to the meat. Proceed with the recipe as usual.
