1 lb. Boneless, Skinless, Chicken Breasts, Cut into 1-in. Pieces
2 T. Vegetable or Olive Oil (Coconut Oil)
1 Medium Onion, Diced (About 1 Cup)
3 Medium Cloves Minced Garlic (About 1 T.)
1/4 tsp. Dried Oregano
8 oz. Ziti or Penne, Cooked
1 2/3 C. Low- Sodium Chicken Broth
12 oz. Broccoli Florets (Fresh or Frozen) (4 C.)
1/4 C. Oil-Packed Sun-Dried Tomatoes, Rinsed, Drained and Coarsely Chopped
1/2 C. Heavy Cream
1/2 C. Grated Asiago Cheese, Plus extra for serving
1 T. Fresh Lemon Juice
Grated Fresh Lemon Zest, to taste

Season chicken with salt and pepper. Heat 1 T. of oil in a large skillet over medium-high heat. Add chicken and saute until golden brown and cooked through. Remove chicken and set aside.

Add 1 T. oil to same pan, stir in onion and 1/2 tsp. salt. Saute onion until translucent, stir in garlic and oregano, saute until fragrant.

Add chicken broth to pan, stirring up brown bits. Increase heat to high and continue stirring until liquid thickens. Stir in cream, broccoli and sun-dried tomatoes and cook until broccoli is tender. Stir in cheese, chicken (and any accumulated juices) and pasta. Heat throughout.

Just before serving, add lemon juice and zest.
