2 T. Unsalted Butter
¾ c. Half and Half
1 T. Minced Shallot
1 Clove Minced Garlic
1 Sprig Fresh Rosemary
2 Medium Yukon Golds
½ C. Gruyere
1 T. Shredded Parm
Dash Nutmeg

Preheat oven to 350º.

Butter an 8 oz. oval gratin dish.

Add Half and Half, shallots, garlic, rosemary, and nutmeg to a medium sauce pan. Bring to a light simmer.

Add potatoes to saucepan and simmer for 3 minutes. The potatoes should be just covered with the liquid. Once you see the liquid thicken a bit remove and discard time.

Pour half of the potatoes into the prepared baking dish. Pot with 1 T. of butter and 1/2 of the Gruyere. Pour in the rest of the potatoes and finish covering with Gruyere and parm. Dot potatoes with last of butter.

Cover with foil and bake 40 minutes.

Remove foil and bake until golden and bubbly. (Approx. 10 minutes)
