2 lbs. Skinless, Boneless, Chicken Breasts. Cut into bite size pieces.
2 C. Chopped Onions
2 Garlic Minced Garlic Cloves
2 tsp. Ground Cumin
1/2 tsp. Dried Oregano
1 tsp. Ground Coriander
2 (4.5oz) cans Chopped Green Chilies, undrained
2 (15.5 oz) cans Cannellini Beans, drained and rinsed
1 (14 oz) can Fat-Free, Less Sodium, Chicken Broth
1/2 tsp. Hot Pepper Sauce (Optional)
1 C. Shredded Monterey Jack Cheese
1/2 C. Chopped Fresh Cilnatro
1/2 C. Chopped Green Onion

Heat a large skillet over medium-high heat. Coat pan with cooking spray.
Add chicken and cook 10 minutes or until chicken is browned, stirring frequently.

Heat a large dutch oven over medium-high heat. Coat pan with cooking spray. Add onion, saute for 6 minutes or until tender. Add garlic, saute 2 minutes. Stir in cumin, oregano, and coriander, saute 1 minute.

Stir in chilies; reduce heat to low, partially cover and cook 10 minutes.

Add chicken and broth, bring to a simmer.

Cover and simmer 10 minutes. Stir in beans (we smash half of them for thickening) and hot sauce (if you are using). Heat through.

Serve with cheese, cilantro, and green onions sprinkled over the top.
