SPIEDINI:
2 pounds boneless skinless chicken breasts
1 cup Progresso Italian seasoned breadcrumbs
1/2-3/4 cup of Bertolli extra virgin olive oil
1 tablespoon black pepper
1 tablespoon lemon pepper
1 tablespoon garlic powder

AMMOGLIO:
3/4 cup of Bertolli olive oil (regular olive oil - NOT extra virgin)
1 cup real lemon juice
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper
1 teaspoon dry parsley
1/2 cup fresh basil (or more to individual taste)
2-4 fresh garlic cloves (based upon individual taste)

SPIEDINI:
Cut chicken breasts into approximately 1 1/2 inch thick cubes.
Place chicken cubes into bowl.
Mix into bowl, 1 tablespoon black pepper, lemon pepper and garlic powder, and with large spoon, spread over all chicken.
Pour in 1/2-3/4 cup extra virgin olive oil, such that all chicken in adequately coated.
Mix chicken, olive oil and spices with spoon so all chicken area is covered.
Mix in 1 cup of Italian seasoned breadcrumbs and mix chicken around bowl so breadcrumbs become attached to chicken.
Put breaded chicken on metal or wood skewers
To grill, place skewers over medium hot coals, turning skewers until all sides of chicken become golden brown and chicken is cooked through.
Remove skewers from grill and remove fully cooked chicken cubes into serving tray.
Cover until ready for serving.


AMMOGLIO:
Mix 3/4 cup of regular olive oil into mixing bowl.
Add 1 teaspoon of salt, black pepper, red pepper and dry parsley.
Slowly add lemon juice into bowl, whipping the oil and lemon juice.
As you continue to add lemon juice, whipping will gradually thicken the olive oil and lemon juice. Continue until mixture has more lemony than oily flavor.
Chop fresh basil and garlic cloves
When olive oil and lemon juice have thickened based upon whipping, add in fresh basil and garlic.
Serve on top of chicken spiedini table side.
