Flour tortillas:
Chicken (cooked and sliced)
1 tsp minced garlic
1 pre-packaged bag of baby spinach
Salt, pepper & cayenne pepper to taste
4 oz. crumbled goat cheese
12 oz shredded monterey jack check
Olivia Oil or non-stick cooking spray

Avocado Sour Cream:
1 avocado, chopped
1/3 cup sour cream
1 Tbsp mayonnaise
1 tsp lime juice
1/4 tsp onion powder
salt and pepper to taste

Directions:
Directions:
Heat spinach with garlic, salt, pepper & cayenne pepper over medium-low heat in a pan until just wilted. Remove from heat and set aside.
Heat the grill pan (or regular pan) over medium-high heat. Drizzle with olive oil or spray. Toast the inside of the tortilla for about 30-45 seconds

Take the tortilla off the grill pan and assemble as follows: over half the flour tortilla, sprinkle about 2 tsp of Monterey jack cheese, few slices of chicken, spinach, crumbled goat cheese

Return to the grill pan and cook for about 1-2 minutes. Carefully use a spatula to flip the empty half of the tortilla onto the loaded half. Let it cook about another 30 seconds, then flip it over. Cook additional 1-2 minutes


Avocado Sour Cream:
Use a fork to mash avocado as much as possible. Combine with all other ingredients and stir together
