2/3 cup water
4 TBSP Wilton meringue powder
1-1/4 cups solid white vegetable shortening (Crisco)
½ teaspoon salt
1-½ teaspoon Almond Extract
¼ teaspoon Coconut extract
12 cups (approx. 3 lbs.) powdered sugar

Directions:
Directions:
Combine water and meringue powder. Whip at high speed until peaks form. Add 4 cups of sugar beating at low speed. Add flavorings (extract) and salt and mix in thoroughly. Add *shortening and mix thoroughly. Gradually add remaining powdered sugar approximately a cup at a time, mixing thoroughly after each addition.

Color as needed with vivid Wilton Paste Colors (note: Use clean toothpick each time you need to remove color from container – This keeps paste colors from becoming contaminated)

Makes 7 cups.

Can be stored in refrigerator in airtight container for 2 weeks, or in freezer for up to 3 months.

*Measuring tip for shortening:
Pour ¾ cup cold water into 2-cup measuring cup. Spoon shortening into cup until full to 2-cup mark. Remove shortening when ready to use and throw away water. This is much easier clean-up and measuring than trying to press into cup and removing with spatula.
