Pecan Pie Recipe

1 cup corn syrup
1/3 cup brown sugar
1/3 cup white sugar
4 tbsp. melted butter
1 tsp. vanilla
1 tsp. vinegar
1/2 tsp. salt
4 eggs (3 if x large) beaten
Approx. 2 cups pecan halves (more or less)

1 large deep unbaked pie shell

Pre-heat oven to 350 º F. - bake on lower rack.
If using a frozen pie shell, be sure to thaw it first.
In large bowl beat eggs, with beater. Do not over beat.
Add corn syrup, sugar, melted butter, and all other ingredients except pecans.
Mix well with beater.
Stir in pecans.
Pour into pie shell which is on baking sheet or a pizza pan.
This makes it easier to transfer the pie to the oven.
Bake 30 - 40 min. and check to see if it is getting too brown.
If it is turn the oven down to 300' - 325 º F. and continue to bake until the pie is firm in the center.
It will take nearly an hour.
Cool well before serving. It must be cold to be set.
Serve with ice cream or cheese.
It is very rich, so smaller servings are all that is required.
You may also make filling and fill large tart shells, and bake a shorter time.

I prefer the look of pecan halves, but the pie is easier to cut if using broken pieces.
You can adjust amount of pecans to your taste, but they should float to cover top of pie. If using frozen pecans toast them lightly before adding to filling.
