4 medium zucchini, sliced
4 medium tomatoes, sliced
1 1/2 lb. hamburger
1/4 c. chopped onion 1/4 c. chopped green pepper
2/3 c. uncooked rice (not minute rice)
1 1/2 tsp. cinnamon 1/4 tsp. allspice
1/4 tsp. nutmeg 1/4 tsp. pepper
2 tbsp. parsley 1 c. tomato juice
1 c. shredded cheddar cheese

Directions:
Directions:
In a skillet, brown hamburger with onion and green pepper. Drain and add spices.
Layer the casserole in a 9x13 baking dish:
Place 1/2 zucchini slices on bottom and salt
Sprinkle rice over zucchini
Put 1/2 hamburger mixture over rice
1/2 tomato slices
1/2 cheese
Repeat process leaving top cheese off until almost done baking.
Pour tomato juice over the top

Cover with foil. Bake 375º till almost done (about an hour) and then add remaining cheese. Return to oven until cheese is melted.

Can add more cheese if you like.
