2 lbs small russet potatoes
1 teaspoon salt
1 teaspoon pepper
2 large cloves chopped garlic
2 larch sliced onions
1/2 cup olive oil
1 teaspoon vinegar

Directions:
Directions:
Wash potatoes and pierce with a fork in a couple of spots. Coat with sea salt. Cook at 400º for 1 hour.

Sauté onions, pepper and olive oil until onions are translucent. Add salt and garlic, cook 2 minutes. Add vinegar, cook for 2 more minutes. Do not overcook.

When potatoes are done, punch them. Pour onion mixture over and add more olive oil. Place in oven on low until ready to serve.
