8 oz. unsweetened chocolate
1/2 lb. unsalted butter, cut into cubes
8 egg yolks
1 1/4 cups sugar
5 egg whites
1 tbsp. unsweetened cocoa powder, for decoration (optional)
1 tsp. powdered sugar, for decoration (optional)

Butter the bottom and sides of an 8-inch springform pan. In a microwavable bowl, melt together the chocolate and butter; set aside. In a bowl, beat egg yolks and sugar with an electric mixer until light and lemon colored. Add the chocolate mixture; blend thoroughly. In another bowl, beat the egg whites until stiff but not dry. Add half of the beaten whites to the chocolate mixture; beat. Fold in the remaining whites. Pour 3/4 of mixture into the prepared pan. Save the remaining mousse in a small bowl and refrigerate. Bake in a preheated 350º oven for 1 hour and 15 minutes. Transfer the cake to a rack and let cool for 10 minutes. Remove the sides of the springform and let cool completely. Spoon some of the reserved mousse over the sides of the cake, smoothing it over like an icing. Spoon the remainder over the top of the cake and smooth. If desired, sift the cocoa powder and then the powdered sugar over the top.
