1 1/2 C almond flour (almond meal)
1/2 tsp. salt
1 tsp. baking soda
4 over ripe bananas
3 large eggs
2 tsp. vanilla
1 tbsp. honey
1/4 C coconut oil (melted)
1/2 C chopped walnuts

Directions:
Directions:
Preheat oven to 350º.

Mix the flour, salt and baking soda together and set aside.

In a food processor, mix the bananas, eggs, vanilla, honey and coconut oil. Next, add the flour mixture and pulse a few times. Stir in the walnuts.
Spoon the mixture into a muffin pan lined with muffin cups.
Bake for 25 minutes, remove from oven, and let cool in the pan.

Enjoy! Oh, and I like mine with apple butter :) Can be stored in an airtight container for up to 4 days or freeze and then microwave each muffin for 30 seconds.
