1 cup shortening
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/4 cup milk
1 teaspoon vanilla
3 cups gluten free flour
1/2 teaspoon soda
1/2 teaspoon xanthan gum

Date Nut Filling
2 cups dates, chopped
1/3 cup sugar
1 cup water
1 cup black walnuts, chopped

Dough:
Cream shortening and sugars until fluffy; add egg, milk, and vanilla; beat until well combined. Sift together dry ingredients; slowly add to creamed mixture. Mix well. Chill 1 hour.

Date Nut Filling:
Combine dates, sugar and water in saucepan. Bring to a boil; reduce heat. Cover and simmer 10 minutes, stirring often. Add nuts. Cool.

Shaping and Baking Cookie:
Divide dough into 2 balls. Roll out each ball about 1/8-inch thick and shape into a large circular disk. Place 1/2 of the date nut filling over each rolled out disk. Roll up jellyroll style. Freeze overnight. Slice cookies 1/4-inch thick; place on lightly greased cookie sheet and bake for 12 minutes, or until evenly browned in a 350 ºF oven.

Bob's Red Mill gluten free all-purpose flour is good in this recipe. Make sure to use xanthan gum because it helps prevent cookies from crumbling.
