1/2 cup chopped onion
2 tablespoons dry vermouth
2 tablespoon freshly squeezed lemon juice
1 tablespoons whipped butter
2 garlic cloves, peeled and thinly sliced
1 teaspoon olive oil
12 clams, scrubbed
Chopped fresh parsley, for garnish

Directions:

In a 8 x 8 x 2-inch microwavable baking dish combine all ingredients except clams. Cover and microwave on High (100%) for 2 minutes. In same baking dish arrange clams with hinged side of each clam toward edge of dish, leaving a space between each. Cover and microwave on Medium (50%) for 2 minutes. Rotate casserole 1/2 turn; cover and microwave on High for 3 minutes. Let stand for 1 minute. Garnish with chopped parsley. Serve clams with onion mixture and crusty bread. Serves one.
