6 medium-sized parsnips (about 1 lb.)
2 oz. lean salt pork (finely diced)
1/2 cup Maple Syrup

Directions:
Directions:
Peel the parsnips and cut each into about 2 1/2 inch lengths; then cut each section lengthwise in 1/4 inch slices. Place in a 9 inch square baking dish. Top evenly with the salt pork and pour the maple syrup over all. Bake uncovered in a 350º oven for about 1 hour or until parsnips are tender when pierced and the pork is browned. Makes 4 to 6 servings.
