peel from 1 grapefruit
2 1/2 cups sugar
1 tsp. ground ginger
1 1/2 cups water
1 tbsp. light corn syrup
1/8 tsp. salt
1 tsp. unflavored gelatin

Directions:
Peel rind from fruits in quarters, remove white membrane, then cut rind into 1/4-inch-wide strips. Place in large saucepan and cover with water. Heat to boiling and simmer for 15 minutes. Drain, then repeat cooking with fresh water and draining two more times. Return rind to pan. Stir in 2 cups sugar, corn syrup, ginger, salt and 1 cup water. Cook slowly, stirring often from bottom of pan for 40 minutes or until most of the syrup is absorbed. Softened the gelatin in the remaining 1/2 cup water. Stir into the peels until dissolved, then cool. Lift out strips, one at a time, and roll into the remaining 1/2 cup sugar. Line a cookie sheet with wax paper and cover with sugar. Place in a single layer to dry.
