3 T melted butter
3 T flour
1 1/2 cup milk
1/2 tsp. salt
dash cayenne
3/4 cup grated cheese
3 1/2 cup cooked carrots

Directions:
Directions:
Blend butter and flour, add milk slowly and cook until thickened, stirring constantly. Add seasonings and 1/2 cup cheese. Place carrots in buttered baking dish, cover with sauce and sprinkle top with remaining cheese. Bake in moderate oven (350º) for 15 minutes. Serves 6-8.
