2 Cups Cherry tomatoes Quartered
1 Cup Red onion Chopped small
1 Cup Green bell pepper Chopped small
1/2 Cup Fresh cilantro Washed, dried & chopped
2 Tablespoons Lemon juice
1 Teaspoon Chili powder
½ Teaspoon Salt
¼ Teaspoon Ground black pepper

1. Combine all ingredients. Adjust seasoning to taste. Serve over chicken, pork,
grilled tofu or over lettuce for salad.
