6 Pounds Baking potatoes Cut into ¼”-thick strips
3 Tablespoons Vegetable oil
2 Teaspoons Salt
Cooking spray
2 Tablespoons Olive oil
3 Tablespoons Garlic Minced
1/3 Cup Parsley, fresh Washed & finely chopped

Directions:

1. Preheat oven to 400°. Cut potatoes into ¼-inch thick strips.
2. Toss potato strips with vegetable oil and salt to coat.
3. Coat two sheet pans with cooking spray, spread potatoes in single layer. Bake
50 minutes or until tender and golden brown, turning half way through.
4. Heat olive oil over low in sauté pan, add garlic, cook 2 minutes stirring constantly,
add parsley and remove from heat. Drizzle oil-garlic mixture over potatoes
before serving.
