1/4 cup butter
1 cup white sugar
2 eggs
1 1/2 cups mashed bananas
3/4 cup sour milk
2 cups pastry flour
1 tsp. baking soda
2 tsp. baking powder
3/4 tsp. vanilla
1/2 tsp. salt

Directions:
Preheat the oven to 350 º F. Lightly grease and flour two 8 or 9 inch round cake pans or one 13 X 9 X 2 inch pan.
In a large bowl, combine flour, baking soda, baking powder, and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, vanilla, and mashed bananas until well blended. Alternate adding the banana mixture and the sour milk into flour mixture. Stir to just moisten. Pour batter into prepared pans.
Bake 25 to 30 minutes for round pans or 30 minutes for a rectangular pan or until a toothpick inserted into center of the cake comes out clean. Let the cake cool in the pans for 10 minutes, then turn out onto a wire rack if making a layer cake.

If using a Pyrex pan reduce the oven temperature to 325 º F. To make sour milk add 1 tbsp. lemon juice or vinegar and fill the cup with milk. Let stand for 5 minutes before using.
