Ingredients: 2¼ c chicken broth 2 stalks celery, finely chopped 1 T onion, finely diced 1 medium carrot, finely shredded 1 stick butter ¾ c flour 8 oz. Cheez Whiz™ 1 oz. grated cheddar cheese 1 oz. grated Swiss cheese 1½ c milk

Directions:In large pot, bring broth to boil. Add celery, carrot and onion. Simmer 25 minutes until veggies are soft but not mushy. Melt butter in skillet over low heat. Add flour to butter, forming a roux. Stir constantly with wire whisk, until smooth and free of limps. Cook roux 8 to 10 minutes over low heat, whisking constantly to prevent scorching. Turn heat down under broth to medium-low. Add roux to broth. Continue to whisk until mixture is smooth and thick; about 5 minutes. Slowly add Cheez Whiz and grated cheeses. Continue cooking until cheese is melted, whisking occasionally. Heat milk in microwave until warm. Add to soup slowly. Whisk until smooth. Add more milk if needed for desired consistency. Refrigerate leftovers. |

Notes: Janet has lived in San Antonio since 1978. Jim's Restaurants are a San Antonio icon; an institution since 1947. Jim's are well-known for their Canadian Cheese Soup, Janet's favorite. The recipe for that soup appeared in the San Antonio Express-News a number of year ago. The recipe made a gallon of soup. The article stated, “The restaurant uses a nondairy creamer called Instant Blend to thin out the soup at the end; however, milk works just fine as a substitute.” Thanks to Beverly Williams at JustaPinch.com for a reduced quantity recipe.
