½ tablespoon extra virgin olive oil
3 lean chicken breasts
½ tablespoon extra virgin olive oil
½ onion, sliced
2 cups broccoli
1 cup carrots, julienne
1 cup mushrooms, sliced
2 cloves garlic, minced
½ tablespoon peanut butter
1 tablespoon soy sauce
½ teaspoon sriracha
couple dashes of fish sauce
¼ teaspoon sesame oil
⅛ teaspoon red pepper flakes
⅛ teaspoon sesame seeds

Directions:

Add oil to a large skillet.
Add chicken and saute until fully cooked, 4 minutes on each side. Take out of the pan and set aside.
In the same pan heat another ½ tablespoon of oil.
Add onions, broccoli, carrots and mushrooms. Saute for 3-4 minutes until slightly tender.
Add in garlic and saute for 1 minute.
Stir in peanut butter, soy sauce, sriracha, fish sauce, sesame oil, red pepper flakes and sesame seeds. Bring to a low simmer and cook for 1-2 minutes.
Slice cooked chicken and add back into the pan. Toss to coat the chicken. Cook until chicken is warmed through (1-2 minutes).
