1 unbaked pie shell
4 lg. eggs
1 can evaporated milk
Onions or leeks
Mushrooms
Bacon or sausage, cooked
Parsley
1-2 c. Gruyere cheese, shredded
salt & pepper

Directions:
Directions:
Bake the pie shell in a 400 degree oven for about 5-7 minutes to firm up the bottom. Place a little cheese in the bottom of the shell and then add the vegetables (either raw or lightly sauted) and meats and top with the cheese. As much cheese as will fit in the pie plate. In a medium bowl, whisk 4 eggs and add the can of evaporated milk. Add chopped parsley and freshly ground pepper. Pour egg mixture into the pie shell. Bake in a 425 degree oven for 15 minutes and then reduce heat to 375 degrees for another 30-40 minutes. Insert knife into center until it comes out clean.
