2 C sifted flour
¼ C sugar
1 t baking soda
1 t salt
2 eggs
2¼ C sour milk
¼ C melted shortening or oil

Have griddle hot by the time your batter is mixed.

Sift flour and whisk all dry ingredients together well.

Put 2 C milk with 2 T Cider Vinegar in glass bowl in the microwave for 2-4 min depending on your microwave. Mixture should be baby bottle warm. Stir gently. You want the milk to turn into soft curds and whey. Add enough additional vinegar a few drops at a time, stirring slowly until you can begin to see the whey (looks kind of watery gray). You don't want the curds to turn into firm lumps, so as soon as you see the milk separating, you have added enough vinegar. Stop stirring immediately. If the curds do turn a bit firm, it's okay the texture will just be a bit different.

Beat eggs with oil in a separate bowl. Add the curds and whey and whisk together.

Pour the egg mixture into flour, all at once and whisk together just until mixed. Do not stir again!

Be careful not to stir batter again.
