2 C flour
1¾ C sugar
2 t baking soda
2 t cinnamon
½ t salt
2/3 C vegetable oil
2 C grated carrots
½ C raisins
½ C walnuts
½ C drained crushed pineapple
½ C shredded coconut
3 eggs
2 t vanilla

Directions:
Directions:
Preheat oven to 350°F.

Combine flour, sugar, baking soda, cinnamon and salt. Stir in grated carrot, raisins, pineapple,coconut and walnuts. In another bowl, beat eggs with vegetable oil and vanilla. Stir mixture into flour mixture until batter is just combined. Spoon batter into muffin tins, filling to the top. Bake for 20 min. or until done.
