3 tbsp. olive oil
1 large onion
1 large sweet potato, peeled and cut into 1 inch cubes
4 cloves garlic
2 cans black beans (19 oz) rinsed
1 can (28 oz) whole plum tomatoes
1 cup grape juice
1/4 cup tomato paste
3 roasted red peppers (2 cups)
1 tbsp. chili pepper
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. dried oregano
1 tsp. dried basil
2 tsp. red pepper flakes

Heat a large pot over medium heat. Add olive oil, onion and sweet potatoes. Saute for 5 minutes or until onion is golden and sweet potato is lightly softened.
Add garlic, beans, tomatoes, grape juice, tomato paste, red peppers, chili powder, cumin, coriander, oregano and basil. Stir well.
Bring to a boil. Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
Sprinkle with red pepper flakes.

You can buy roasted red peppers or make your own for this recipe. Wash and dry very ripe red peppers. Cut in half and remove seeds. Roast in 200º oven until skins are blackened. Let cool. Remove blackened skins.
