1 onion, diced
1 qt sauerkraut
1 - 2 cups smoked ham, diced
1/2 to 1 cup uncooked rice
Water according to recipe on rice package

Directions:
Directions:
In a large skillet with a lid, partially cook diced onion in a small amount of olive oil. Sprinkle rice over the onion then add the water indicated on the rice package. Layer the diced ham on top of the rice, followed by the sauerkraut. Do not stir. Cover then bring to a boil. Cook on low temperature until the water is evaporated.

Personal Notes:
Only add the amount of water specified on the rice package, otherwise the dish will be mushy. I would suggest you cut the recipe in half the first time you make it, as the recipe makes a large batch.
DO NOT USE MINUTE RICE!!
