1 egg white
2 1/2 tbsp. cold water
3/4 cup brown sugar
1/2 tsp. vanilla
1/2 tsp. baking powder

Directions:
Directions:
Combine egg white, water, sugar in the top of a double boiler.
Mix well with an electric beater and cook over medium heat beating constantly until fluffy and the icing peaks hold their shape.
Add the vanilla and baking powder, remove from heat and beat till the icing forms stiff peaks.
Ice the cake while the icing is still warm. It is best to serve the same day that the icing is made.
One batch should be enough to frost a 2 layer cake.

Make sure that there is water in double boiler and that it is not touching the bottom of the top pan. The water should be at a slow boil (medium heat).
