Ingredients: 1 box of yellow cake mix 3 large (extra large if possible) eggs 1/3 cup vegetable oil ¼ lb. butter 1 can pineapple slices in juice (10 slices) – reserve pineapple juice 13 Maraschino cherries (whole or halves) 1/3 cup walnut halves 1 cup light brown sugar 1 cardboard round covered with aluminum foil

Directions:1. Preheat oven to 350F 2. In a 12” cast-iron skillet, melt butter. Add brown sugar and stir until mixture is very runny. Reduce heat to a level where the caramel stays runny. 3.. Arrange pineapple slices on top of caramel with 8 slices around the edge and 1 slice in center of pan. 4. Place one cherry in middle of each pineapple ring and four around center ring. Push cherries into the caramel. Arrange walnuts as desired. 5. Add water to reserved pineapple juice to equal 1-1/4 cups liquid. Mix cake mix, water/juice mixture, eggs and oil. Pour evenly over pineapple slices in cast-iron skillet. 6. Bake 35-40 minutes or until a toothpick test in center of cake comes out clean. Remove from oven and let sit in pan for 3-4 minutes. Center prepared cardboard over the pan and turn over. Gently remove skillet. |
