8 qt. ripe tomatoes
4 c green bell pepper, chopped
2 c onions, chopped
½ c salt
5 c sugar
1 t ground cloves
1 t cinnamon
2 t ginger
2 t nutmeg
1½ qt. vinegar
fresh red hot chilis to taste

Directions:
Directions:
Put all ingredients through food chopper. Blend all ingredients in large pan and boil gently for 3 hours, or until it is cooked down to sauce consistency. Put in ½ or 1 pint jars and can according to preferred method.

This recipe is from the cookbook, What’s Cooking in Harlingen, Texas Benevolent, Patriotic Order of Does, Drove #90, Harlingen, Texas. Third Edition, September 1986. Mike lived in Roswell and Albuquerque for a number of years before moving back to Texas. The red hot chilis gives this recipe a New Mexico flavor.
