5 eggs, separated
½ t cream of tartar
1 - 6 oz. package chocolate chips, melted
1 t vanilla
1 pt. whipping cream
½ c sugar for egg whites
¾ c sugar for egg yolks
confectioners' sugar

Directions:
Directions:
Preheat oven to 325° F. Line one 15½" x 10½" jelly roll pan with parchment paper. Grease and flour lightly. Separate eggs. Beat whites with cream of tartar until stiff. Gradually beat in ½ cup of sugar. Sift remaining sugar and flour together. Beat the egg yolks until thick and fold flour mixture into them. Stir in vanilla and melted chocolate. Egg yolk mixture will be very stiff. Carefully fold egg yolk mixture into beaten egg whites. Evenly spread batter into prepared pan. Bake for 20 minutes. Let cake cool for 5 minutes. Turn cake onto towel sprinkled with confectioner's sugar. Peel off parchment paper and roll cake up with towel. Let cake cool completely. Unroll cake and spread with whipped cream. Roll again. Frost with Chocolate Ganache. For variation, add 2 tablespoons of rum or favorite liqueur to whipped cream. Serves 8.
