4-6 bacon strips, diced
1/2 c celery, finely diced
1/4 c onion, chopped
1/2 c carrots, finely diced
1/4 c green onion, finely diced
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp white pepper
1 clove garlic, minced
2 large baked potatoes, peeled and cubed
2 c chicken broth
1 1/2 c whipping cream (12 oz.)
2 c cheddar cheese, shredded

Directions:
Directions:
Cook bacon in a large pot until it is brown and crunchy. Add the celery, onion and seasonings: salt, black pepper, white pepper and garlic. Saute until the vegetables are translucent. Add the potatoes and cook for 5-8 minutes over medium heat, stirring occasionally. Gradually add the chicken broth and whipping cream and bring to a boil; lower the heat and stir for 2 minutes. Puree the mixture with a had blender, leaving some small chunks of potato for texture. If you do not have a hand blender, use a standing blender and the return pureed soup to the pot. Whisk in cheddar cheese until it is melted. Serve while hot.
