l generous pound candied cherries - red & green mix
1 lb. deluxe mixed fruit
1 lb. mixed fruit
1 - 1 1/2 lb. washed, well drained raisins
1/2 cup all purpose flour
1 Duncan Hines spice cake mix
3 eggs
1 cup water
1/3 cup oil
1/4 tsp. salt
1 tsp. vanilla

Directions:
Directions:
Heat oven to 300 º F or start at 325 º F and turn down to 300 in 20 mins.
Line 2 loaf pans with parchment paper and oil well.
I would put a layer of brown paper on bottom of loaf pan, under the parchment.
Mix fruit together in large bowl and coat with the flour.
In another mixing bowl make cake mix with water, eggs, oil, salt, and vanilla. Beat according to instructions on box.
Fold fruit mixture into cake mix and divide into the prepared loaf pans.
Bake until firm in the centre - until toothpick comes out clean,
approximate. 1 1/4 - 1 1/2 hr. Cool until easily handled to turn out onto a cooling rack.
Cool thoroughly and wrap in saran and foil.
Store in fridge or freeze until ready to use.

Lorraine and Gerald Hartung were Mom's neighbors at her William Street apartment and Lorraine is an avid and generous baker. Among the many treats she brought Mom (both at the apartment and Royal Terrace) was this cake which was so moist and tasty. Lorraine gave Edith the recipe which was not very precise and contained exact (sic) instructions like 1 bag of raisins. Edith filled in the details. Deluxe mixed fruit contains more cherries than regular mixed fruit.
